This chapter includes an eclectic selection of recipes for a delectable array of spiced up main courses. These recipes trace origins to a variety of nations and they traverse a range of different cooking techniques. There’s something to appeal to everyone, with a menu that includes mild, medium and hotly spiced dishes.
The recipe for Dianne’s Chicken Satay delivers a lovely rich and nutty curry with a grand selection of spices led by coriander and cumin. This recipe is mouthwatering, as is the Velvety Red Curry with Beef. This dish is my most complex curry and it contains many spices that balance and blend blissfully bringing a rather hot finish to the dish. There is also a recipe for Green Curry with Fish. This is a stylish dish that dazzles at dinner parties.
Tempting Pad Thai – this is a recipe that will give you an authentic taste of Thailand. It’s easy to make and quick too, with minimal ingredients. The recipe for Glowing Gado Gado is a real treat. This saladlike dish, with a feast of lightly cooked vegetables and boiled eggs, is dressed with a divine peanut sauce. Next we have Honey Cashew Chicken with stir fried chicken in a tangy sauce that shines when it is cooked. The dish incorporates crunchy snow peas and roasted cashews, all served over rice – this one is definitely a crowd pleaser.
There is a terrific Vegetable Lo Mein recipe with Chinese-Style noodles coated with a dreamy, slightly smoky sauce. The dish incorporates a bright combination of crisp fresh vegetables. Turning to the hotter side, there is also a recipe for Fiery Chili Tacos, giving a taste of Mexican cuisine. These tacos look as good as they taste and they are very satisfying.
For an Italian twist we have a Hot Italian Bolognaise which matches hot and spicy sausage meat with a tomato-based sauce that is also spiced up. My Sweet Italian Bake marries sweet and spicy sausages with vegetables, chili and pasta, all topped off with Mozzarella and Parmesan cheeses. This is another easy dish and it’s most certainly a comfort food.
Doug’s Spicy Baked Chicken is dredged in flour mixed with a party of spices, then baked for a crisp finish. This is another very pleasing dish that is also easy to make. There’s a recipe for Yumbo Gumbo, a slow cooked dish in a gravy-like roux with a complex mix of spices, chicken, smoked sausage, aromatics and vegetables. This is an ideal dish to serve for a crowd with rice, it’s hearty and its bold flavors are very rewarding.
Enjoy these recipes and of course feel free to vary the amounts of spice that you use to taste – just keep spices proportionate with each other. Play around with different proteins too – the red and green curry pastes work particularly well with chicken too. Lo mein noodles are often served with beef and chicken also works well in this dish, gumbo will happily enjoy the addition of Chorizo and other types of sausage.
